The Freezer Breakfast Burritos

Scrambled eggs, black beans, and cheese wrapped up and frozen — a real breakfast in the time it takes toast to pop.

What you need

How to make it

  1. Scramble the eggs in a large pan over medium heat until just set — don't overcook, they'll finish reheating later.
  2. Warm the tortillas slightly so they roll without cracking.
  3. Layer eggs, black beans, cheese, and a spoonful of salsa down the center of each tortilla.
  4. Fold in the sides and roll tightly, burrito-style.
  5. Wrap each one individually in foil or freezer wrap and freeze flat.
  6. To reheat: unwrap, microwave 2–3 minutes, or thaw overnight and pan-toast.
