What you need

How to make it

  1. Boil the three batches separately — 6 minutes for soft, 9 for medium, 12 for hard — chilling each in an ice bath right after.
  2. Halve all the eggs and arrange them across a large board or platter, grouped loosely by doneness.
  3. Season generously with flaky salt and cracked pepper.
  4. Fill in the gaps with bread, cheese, herbs, and fruit.
  5. Serve within an hour of assembling for the best texture on the soft eggs.
